Established in 1981, The Lunchbox was founded to provide meals reminiscent of school lunches with fresh, homemade ingredients. The Knoxville based franchise—originally located in Downtown and The Atrium—expanded into a free-standing building in Bearden. The existing restaurant underwent significant renovations to enlarge the kitchen to create ample space for their catering services.
As a one-stop shop for quality food, the front-of-house includes a self-serve salad bar, soup station, takeaway meals and desserts, and seating area. The interior layout offers the ability to quickly grab-and-go, sit down for a private meal, or a group lunch. The weekday market was created to adapt to customers’ changing lifestyles and lunchtime needs.
The interior materials palette provides a nostalgic feel that is welcoming to all in the community. The exterior also received a face lift with new signage and paint to reflect the fresh and simple interior.
